HKLLC and CUHK (to learn Cantonese)

Has anyone done the Cantonese program at the Hong Kong Language Learning Centre? What do you think of it? What did you get out of it? Did your Cantonese improve?

Which one do you recommend? My goal is to be able string together sentences in Cantonese without inserting as many English words, improve vocabulary, and learn grammar so I can put together sentences. I'm an American Born Chinese who understands a lot of spoken Cantonese and can speak a little. Can read simple words and can barely write.
