I think that "Is anyone vegetarian?" could be "you3 mei2 you3 ren2 chi1 su4?". But what is the right character for su4?

有没有人吃。。。。

蔌 is a commom wording for all vegetables. You could understand from the following article.

蔬菜的总称

山肴野蔌,杂然而前陈者,太守宴也。——宋·欧阳修《醉翁亭记》

素 at this sentence you asked is more like 素菜. vegetable dish.

You want to be be careful doing this, because often 肉 by itself means 猪肉。So some Chinese will take this to mean not eating 猪肉. Waitresses especially will quite happily tell you a certain dish doesn't contain any 肉, only for it to arrive and have chicken/beef/fish in it. I'm not vegetarian myself, but I've seen this sort of thing happen all the time to vegetarian friends of mine.

不吃肉 is not equal to 吃素, unless you 吃健康素 (which means you only have vegetables, but still you eat garlics, green onions, etc.) If you 吃全素, you cannot have garlics, green onions, eggs, and milk.
