kidney kabobs..

anyone enjoy one of those before? :)

yum.

in beijing we used to eat lots of kabobs in the winter.. you just can't get some of that stuff here. sometimes i wonder if eating kidney is bad for you though.

Man I love the Chuanr in Beijing; every shop seems to do it a little different. I would however suggest that you be careful eating organ meats in China. The kidney is one of those products that takes a little bit of know how to prepare. Nothing technical but essentially you should soak them in 3 or 4 changes of water or milk for at least 6 hours, this will draw out a lot of that nasty stuff that kidneys tend to filter out in the body.

That being said, it’s doubtful that your local hutong joint is going the extra mile for you.
