I would however suggest that you be careful eating organ meats in China. The kidney is one of those products that takes a little bit of know how to prepare. Nothing technical but essentially you should soak them in 3 or 4 changes of water or milk for at least 6 hours, this will draw out a lot of that nasty stuff that kidneys tend to filter out in the body. That being said, it’s doubtful that your local hutong joint is going the extra mile for you. Quote
