How do you say "in order to prevent the spread of disease, please wash your hands before you eat?"

I have 为反对转染病的扩散，吃饭以前请洗手 but I know this is not right.

为反对转染病的扩散

You are almost there. I suggest you use 爲了遏止 / 阻止 / 防止 . And it is 傳染病, not 转染病 (note the radical on the left).

PS - you might also consider putting the message in more general terms like "for personal hygiene" -> 保持個人衛生，進食前請洗手。
