What is the best way to become fluent in a year? I'd know only a little Mandarin, will continue to be taking classes for another year. I will then go to China for a year. i hear that its important to interact with native speakers while you're over there--but I'm kind of shy. I'd love just to find a coffee shop or something where you can just sit down, listen to other people and try to pick it up. But I also hear that only Westerners go to coffee shops... Is there a Chinese equivalent to a place like that? Maybe just go to a farmer's market and sit down somewhere or something... Any other ideas to make the most out of living in China?

Depends on the area, but in Lijiang (Yunnan) most cafes are flooded with Chinese now.
