Possible to go to school part time to learn Chinese?

I would like to know if any of the universities or schools offer more of a part time study program. I am older and not looking for a degree, but I want to come to China to study.

The short answer I believe is yes. The long answer depends on how long you want to go, where, when, how many hours you consider part-time, and what kind of classes you're looking for.
