cooking vocabulary

Recommended Posts

I searched the site for a thread containing a list of cooking/recipe vocabulary but couldn't find one.

Often when i look at recipes in chinese there is some word that i can't find in any dictionary. One recent example was 老/生抽 (lao3/sheng1 chou3) which apparently is just another word (or possibly style of) for 酱油 (jiang1 you2).

There are often words i can guess at but aren't completely sure. 略炒 (lue4chao3) for example.

Anyways if there is already a thread like this, i apologize. If not, i guess this is it.

This should be chōu. These refer to the different kinds of soya sauce available. 生抽 is light soya sauce and is used more to add flavour to the dish. 老抽 is used more for adjusting the colour of the dish e.g. in 红烧肉 etc. Edited by imron
