I've used intelligent pinyin, Wubi and Cangjie. I've also used Chewing a bit but it is buggy. A pal of mine has fixed it but I think he has yet to release the fix.

If a distribution has im-switch, that's what I would use to configure SCIM. That's what I've used on Ubuntu and never had any issue with typing Chinese in Open Office. If a distribution does not have im-switch, then you have to mess with environment variables. Not fun.
