你跟我开的一样快。

or

你跟我开得一样快。

I'm confused ><, there's 快 so I want to use 得 (as in 我开得很快)but it's MY (and HIS) driving so I want to use 的。。。

I'd pick 得 because I could also say:

你开车开得跟我一样快

and here I would def. use 得

but is that correct?

No, it's not. While you can make a noun from a verb in English, that's not possible in Chinese (not as a general rule, anyway). So you don't use 的, but 得 as you rightly point out below.

Yep, it should be 得. The sentence isn't really saying "my driving" and "his driving", because 开 is a verb here: "you drive as quickly as me". :)

Right, after any verb or adjective it's always 得, it's used to introduce a complement of result or degree:

with verb: 他写字写得非常好

with adjective: 天气热得很

的 is used after nouns to indicate possession or attribute:

他的书

蓝色的月亮 :D
