Looking at the dictionary, there are 揉面, 搋面, and 和面 that all mean to knead dough. Talking with some Chinese people and a 拉面师傅, they seem to use these words differently according to different stages of the dough making. From what I can gather 和面 I think refers to the addition and mixing of different dry and wet ingredients of the dough, while 揉面 refers to the actual kneading of the dough. Is this correct? I'm not sure where 搋面 falls into this. Any information or insights would be much appreciated. Hell, I don't even think I've seen the character "搋" before. Certainly will not attempt to pronounce it.
