I would much prefer to have my sashimi or entree prepared by a Japanese chef rather than a Chinese one. There are some Japanese restarants in LA operated by Chinese that receive grades of 'C' by the county health board. These grades are posted outside the restaurant window. On the other hand, all the restaurants that I have been to which are operated by Japanese receive sanitary grades of 'A'. Quote
