Please can you clarify this:

I've got a tourist visa (double entry, 90 days), i've been in Shanghai for about 2 months so far. So I have 30 days left. If i go to HongKong for 1 day, then erturn to china, I can stay here for another 90 days??

Also if I want to stay longer after this, what are my options?

Cheers.

The answer to this part is an obvious yes.

Search the forum for answers to the rest. Or maybe someone else will be willing to take you through it.

if you go to school in Shanghai, then your school should be able to help you renew your visa, same goes with companies... if not just check in with the Chinese embassy in Shanghai

There is no Chinese embassy in Shanghai. There are no Chinese embassies in China! Embassies are all overseas and nearly always in the capital city of the foreign country. Shanghai is still part of China, I think.

You should be able to extend or renew your tourist visa at the Public Security Bureau.
