I believe it stands for "Death before Dishonor"

Close enough. It means "The [Confucian] scholar would rather be killed than be dishonoured."

Yes, that's about right. But even though that's how it's usually translated, 士 doesn't really mean "scholar". In Ancient China, these men were mostly intellectuals and warriors at the same time. It's difficult to capture this in translation, but it's something you should realise when you want to know what this meant back then.
