I came across the character 焯 while reading, and the dictionary gives me two pronunciations: zhuo1 and chao1. Are they both common pronunciations? When would one use one pronunciation or the other?

thanks aristotle. I didn't know that it was the word we often use to describe the cooking method. I only use it for its second meaning (bright). And the pronunciation does not change in Cantonese.
