How do you say: in Chinese

How do you say something like 'Today we are going to speak in Chinese' or 'In Chinese this is called a 帽子'?

My best guess is '今天我们会说汉语' and '这是一个帽子在汉语'. I'm pretty sure zai isn't right though.

Basic thing but its always bugged me that I haven't known how to say something like that.

One possibility would be:

今天，我們將用中文來講話。

'In Chinese this is called a 帽子'?

I suppose you could just say:

用中文的話，這個叫做帽子。

Simple things like that bug me too
