The short version is: 黏 is an adjective (sticky) and 粘 is a verb (to stick). It's worth noting that 粘 is a 多音字, that can also be pronounced nián, however, this is only used as a surname (according to the Guifan dict) and doesn't have the meaning of sticky. 2 Quote
