I'm sure I could find a better job. The same dish can have hundreds of different names in different locations. Same with ingredients. I spent my first years in China in Xi'an, cracked most of the local menu language, then moved to Hunan and could hardly manage to get a boiled egg. After a couple of years there and learning how to get the dinner I wanted, I moved to Guangxi and had to learn all over again. I have remained in Guangxi ever since. The main problems are 1) the same dish may have different names in different places - even neighbouring cities - even neighbouring restaurants. 2) the Chinese name of any one dish may in fact refer to totally different dishes, depending on location or the restaurant's usage. 3) Restaurant menus often just contain mistakes. 4) Dishes are often given fanciful, supposedly poetic names which few people understand. Chinese speakers have to ask what they are. My favourite is the local (one restaurant) dish 外婆飘香骨,which literally translates as "Maternal grandmother's fluttering fragrant bones" - not something I want to eat. In fact it is Sichuan style chilli pepper laden pork ribs - which are delicious. I've never found anyone who knows what it means (apart from the restaurant boss). Even the wait staff had no idea. Before the Beijing Olympics, out blessed guardians provided a very long list of "official translations" of dishes. Everyone I have shown it to here has been largely baffled.
