Hello! I'm interested in studying Mandarin and hopefully become fluent! I speak fluent Cantonese and have studied beginners Mandarin at International Baccalaureate. So I have some knowledge of Chinese characters with reading and writing. So ideally I'm looking for a course for intermediate Chinese learners. I'm hoping to study for 6months - 1 year at a university. I'm not sure which one's would be suitable. I've had a look at the Xiamen and Fudan and Beijing, but I'm not quite sure if there's others which are better.

I'm also a law graduate hoping to train as a solicitor in the UK so would like an area where I'd be able to get some work experience in a law firm. Could you possibly suggest an area? Thanks!

There are of course law firms all over China, although reputable international companies are more likely to have offices in Shanghai and Beijing. Whether or not you can arrange any work experience with them is a different kettle of fish.

In terms of universities and their language courses, there have been numerous discussions here. From my own limited experience, I would say that if nothing else, the environment around Xiamen University is relatively pleasant.

Whilst it's true that there are many threads about where to learn Mandarin in China, I don't seem to be able to find any which strictly relate to my situation. If you are able to find some, I'd appreciate it if you could post me a link.

You may find it more productive by rephrasing your question: "Where NOT to study Mandarin in China?"
