I have tried to make the dish in the US, but something always seems missing. Does anyone have any idea how to make this? I would really like to make it for him. Quote

I've included some links below: I briefly read over some of them and it seems like the important thing is to wash the potato (slices) to get rid of the starch so that it comes out crispy instead of mushy. Personally, I've never made this dish but I've tried it once in Beijing and many times in Shanghai. The ones I've tried seemed to have vinegar as an ingredient but it doesn't seem like it's necessary from the recipes below. Also, in China they almost always add some kind of MSG (chicken, mushroom flavored, etc.). I never use MSG in the USA and my dishes come out not as tasty as the ones in China, unfortunately (from my experience). Good luck. I'm not sure what I am doing. Maybe it is because I did not have any MSG though. I'll have to look through these and try it again. Quote

Lastly, American cooking appliances in homes do not have enough heat so it takes longer to cook which makes the flavor weird also. Quote
