Let's say that someone I know is living in a town or village that is part of a city like Guangzhou or Xi'an. How will the format look like? Quote

That's different again. Generally, the format is quite similar, though. For cities like Beijing and Shanghai, it's: 中国 <postal code> <name of city> <name of district> <name of road and house number> <name of organisation/building/etc> + <office/apartment no.> <name of recipient> 收 P.R. CHINA (if you're sending mail from abroad) For anything below the province level, it's: 中国 <postal code> <name of province> <name of city/county/township/etc> <name of district/village/etc> <name of road and house number> <name of organisation/building/etc> + <office/apartment no.> <name of recipient> 收 P.R. CHINA (if you're sending mail from abroad) If you can give us a specific town you want to send mail to, we can probably help you figure out exactly how to write down the address. It also depends on how the area is administered. Quote
