Is it "I enjoyed learning chinese from you" (past tense) or "I am enjoying learning chinese from you" (continueing action) I think it makes a difference when translating. As for the original English sentence, perhaps it was meant to be "I've enjoyed learning..."; then, the 'from' could be expressing a slightly different meaning to 'with' (the former isn't ambiguous as to it being from a teacher of some sort, whereas the latter might instead be used between students who are attending the same class together).
