In contrary to its appearance and taste, Bitter Melon is very mutritous and very good to your health. It is a great source for Vitamins A and C, iron, phosphorus and is used in the treatment of diabetes to lower blood sugar levels. But I have to admit that when I was younger, I shunned Bitter Melon. When I grow older, I gradually acquire the taste of Bitter Melon. (I guess it is just like how you appreciate girls that you gradually switch your point of focus from appearance to inner beauty.) And now I tell my wife to make the dish as bitter as possible (There are ways to lower its bitterness). Whenever I dine at Chinese restaurant, "Stirred fried sliced beef with Bitter Melon" is my first order. Quote
