Does anyone know anything or know where to get more information on life in the more rural areas of China? Specifically, I was wondering if millet (broomcorn), in the form of boiled whole seeds, could've been fed to an infant or toddler. Does anyone know any good books that cover this?

Wouldn't that just be 小米粥?I often see Chinese moms (or grandmoms) spooning it into the mouths of their young children, even in the city.

Indeed, I saw a granny shovelling 小米粥 (millet porridge) into a kid's mouth not fifteen minutes ago. I'm in a city.

I doubt if anyone could write a book about it, though.

I found a few references to what they called millet porridge in a few textbooks. Is 小米粥 prepared from the whole seeds boiled?

I suggest you Google "millet congee". There is a ton of information there, including recipes and pictures.

#4 -- Yes. You just boil it about an hour after adding lots of water. (Variations abound.)
