You use a Pu'er knife 普洱刀。It looks like a short ice pick with a flattened, spear-shaped tip. Some breakage occurs, but that's OK. After brewing (in a small clay pot) you strain the liquor and that removes any small "grounds." Here's a snapshot of mine. Used it earlier today to pry some pieces off a big Pu'er brick 砖茶。 This Pu'er is a 2009 ripe tea 熟茶 from Menghai 孟海县 in SW Yunnan. It's made from the leaves of old tea trees, over 100 years old.
