The only specific term I know of is 'mojibake', but I doubt it would be widely understood. I think it would be better to use 'corruption', which while not technically accurate, would be understood by anyone, or 'displayed incorrectly' which is vaguer than the original, but also understandable. For example, (half a sentence from wikipedia): ...导致紧接在后面的整个一行全部都是乱码 "...leading to the rest of the line immediately following being corrupted." or "...leading to the rest of the line immediately following being displayed incorrectly."
