Kenny's translation is correct but the speech register is totally different. The original text is very 口语/casual. I would translate it to reflect that. "There were a lot of clients asking for quotes today. It's a good thing we were well-prepared, or else we really wouldn't have been able to handle it." Quote

Or you leave it out?? To appreciate the grammar, it may be better to consider 还真 as 2 separate elements rather than one word: 还真应对不了 = 还+ (真)应对不了 真应对不了 = 真+ 应对不了 Quote
