有云 has nothing to do with clouds. It is used to quote something someone said before.

公 is used to show respect to those who are older or deceased.

Indeed. Simplified characters are sometimes quite confusing.

Dina, in traditional Chinese, cloud is "雲", with rain "雨" on top of "云". "云" itself is another character. But they are combined into a single character in simplified Chinese.

李云迪 or 李雲迪 (the young pianist), I would prefer the latter, but you really have to ask Yundi's father to clarify this.

THis is something I hate about Simplified Chinese. Luckly my name got no problem like this. My surname is simple enough not to make any more simplication~ 尤 .
