The story is, me and several friends (all of varying beginner Chinese proficiency) would like to play the next game of pool, and the current players all speak little English. We didn’t get a shocked response to: 我们能不能打下一比赛? But being clearly foreign we are given a lot of understanding for saying things wrong. I have a strong feeling that what we said is a very incorrect way to ask if we can play after they finish. What would be a better way, in y’all’s opinions?

What about badminton or football or something similar?  I'm guessing 场?

Kind of sounds like you want to take them on at a game of pool, need to vocalise the 'after you're finished' that's only implied in the English.
