Is 鸡丝 finely-cut (slivers of) chicken breast? I always have 肠粉 when I visit Hong Kong or Guangzhou. Never tried it with bitter melon and chicken. Was it served with a sauce or gravy?

Yup! Slivers of chicken. It was wrapped in 腸粉,similar to how shrimp is wrapped inside. This was the first time I saw it on the menu - and it's a dim sum place I've been going to for a while. I wonder if it's because 苦瓜 is really in season now, or somehow we're getting a lot in California. It was served with soy sauce over the 腸粉,which is how this particular dim sum place does all their 腸粉。

That sounds delicious! I'll keep an eye out for it on my next trip south into "Cantonese-food land." I always enjoy that cuisine. So many brilliant combinations of flavors, lots of them gentle. I like Yunnan cooking but sometimes want a change from all the hot peppers and other strong notes.
