Usually, an existing Chinese characters that sound phonetically similar to Stephanie will be used to translate your name, probably three characters. The thing many different 3 set of characters that can sound same to your name. You need to make sure the Chinese meaning of these 3 characters would be suitable for you as each of these 3 characters will have their own meaning. And some could be less flattering than others. I'm unable to offer any translation yet since my Mandarin isn't there yet, but I'm sure someone here will come up with a couple of versions that would suit your needs. :)

 斯蒂芬妮 seems to be a generally accepted transliteration for Stephanie. 

Like 斯蒂芬妮公主 (Princess Stephanie of Monaco)

It doesn't sound like a Chinese name at all, but obviously it's not a Chinese name so I guess that's fine.
