When I've studied actual subject material here in China as a member of a class of Chinese students, taught in Chinese by a Chinese teacher, I've learned a good deal about the subject and improved my Chinese in the course of doing that. It was not without considerable effort, however. (I studied tea at a tea academy 培训茶艺学校。) Your transcriptions off to the side make it easy to understand parts of the lecture that were not initially clear. (I watched the one about wine 葡萄酒。) My own learning experience, however, wasn't "sheltered" in that I was the only foreigner and the teacher wasn't going at my speed to accommodate my language limitations. My classmates were very kind and helped me with my notes during breaks and after class. I snapped photos of all the slides and recorded the entire lectures.
