I've done that quite a few times in exactly the same circumstances. And I ask it just like you did in your example. 

 

After this: 对不起，没有炒菜只有火锅, I usually say, 哦，一个人吃火锅不太好玩， as I leave. 那我改天跟朋友们一起回来吃火锅。

Me too, though I usually say, 那，一个人吃火锅不方便 and leave, without pretending I'll be back with my imaginary friends.

 

(Reminds me of once overhearing a Chinese customer feel he had to explain to the 服务员 that he was eating dinner alone because his friends were all still tied up at work.)
