The 来 is there because of the 用, use some to do something 用 X 来做 X。 That first 爱 belongs with the previous phrase where it's being modified 一种罗曼谛克的爱:

 

用 [一种罗曼谛克的爱] 来 [爱着] 我母亲 and that's all wrapped up in a 是。。。的
