Silky tofu, like 豆腐脑. The goal being not to just move the squares but do so without injuring them. Use soft Jello cubes if you're out of silky tofu.

Easy? Uncooked? The first thing I thought of was bread. Maybe cut slices of bread into 1-inch squares. For people who tend to keep the tips of their chopsticks close together, they can grab pieces by the sides.

For people who are more accustomed to picked up bigger times, they can grab several pieces at a time.

As long as we're here, what's the most difficult common Chinese food to eat with chopsticks? I'd go with a whole flaky steamed fish.

That's what I would have gone with too. It's much harder than the one in the OP about stripping the meat off a chicken wing and leaving only clean bones behind. In fact, it might be impossible with only chopsticks. For example, some people like the meat on the fins the best. They just stick the whole thing in their mouths and spit out the bones. The fish head is tricky too.
