Flavouring dehydrated Gluten?

I quite like the mock duck (gluten) you get from chinese restaurants. It is quite expensive to buy tinned where I live but my local grocer also sells cheap dehydrated gluten. I was wondering if it is possible, and if so how, you cook and flavour dehydrated gluten so it has a similar taste and texture to mock duck? I've tried reconstituting it in stocks but it doesn't really taste any good. Thanks for any help.
