鸡蛋羹

Trying to understand whether this is a custard or a soup, and how exactly it is prepared in, say, northeastern China ...

In northern China, it's called 蒸鸡蛋羹(Steamed egg custard).

I'm not sure if it's also served in southern China.

3 eggs, 2 cups of water

1.Beat the eggs in a heat proof bowl. Stir.

2. Add the water in. Sprinkle a little salt. Stir.

3. Place the bowl in a steamer and steam for 15 minutes by low heat, serve. :roll:
